  1. Two to three days ahead, bring the wine, vinegar, water, onions, root vegetables and all the spices to a boil, then let the marinade cool completely. Put the beef in a non-metal container, pour the cold marinade over it, and refrigerate for 2–3 days, turning the meat once a day.

  2. On cooking day, lift the beef out and pat it thoroughly dry. Strain the marinade, keeping both the liquid and the softened vegetables separately. Sear the beef hard in oil on every side until deep brown, then season with salt.

    💡 Dry meat browns; wet meat steams. The dark crust is where half the gravy's colour and flavour come from, so do not rush it.

  3. Lift the beef out. Fry the strained vegetables in the same pot for a few minutes, then pour in the marinade liquid, scraping up everything stuck to the base. Return the beef, cover, and braise very gently — on the hob or in a 150°C oven — for about 2.5 hours, turning once, until a fork slides in with almost no resistance.

  4. Lift the cooked beef onto a board and rest it under foil. Strain the braising liquid into a clean pan, pressing the vegetables to squeeze out their juices, then discard the solids.

  5. Bring the strained liquid to a simmer and whisk in the crumbled gingerbread and raisins. Cook for 8–10 minutes until it thickens into a glossy gravy, add the syrup, then taste — it should land squarely between sweet and sour. Add salt as needed.
