Traditional dish — no single author — A South Indian dish with no single owner. The reference describes the batter as parboiled rice, poha and legumes soaked overnight, fermented and ground, filled with a spiced potato stir-fry and served with chutney and sambar — which is the structure followed here. It also records a claim that restaurateur K. Krishna Rao popularised masala dosa in 1930s Madras, and an older Mysore-court legend the same page notes is doubtful because potatoes only reached India with the Portuguese. We repeat neither as authorship. The prose is our own.
Watch it being made
Rinse the rice well and soak it in water for 5 hours. Separately soak the urad dal and fenugreek seeds for the same time. Soak the poha for the last 20 minutes only.
Grind the dal and fenugreek first, with a little cold water, until it is white, fluffy and light. Then grind the rice and poha to a fine but very slightly gritty paste. Combine the two by hand.
💡 Mix with your hand, not a spoon. The warmth and wild yeasts on your fingers genuinely help the ferment start — this is standard practice in South Indian homes.
Cover loosely and leave to ferment somewhere warm for 8–12 hours, until it has risen, smells pleasantly sour and is full of bubbles.
💡 In a cold kitchen this can take 16 hours or simply stall. Use the oven with only the light on, or a yogurt maker at 30°C.
Stir in salt gently, keeping the air in. Thin with water until the batter pours like single cream.
For the filling, heat 2 tbsp ghee, pop the mustard seeds, add the chana dal and fry until it turns golden. Add curry leaves, chillies and onions and cook 6 minutes until soft.
Stir in the turmeric, then the mashed potato and salt with a splash of water. Cook 3 minutes to a soft, scoopable mash. Set aside and keep warm.
Heat a flat pan over medium-high until hot. Wipe it with a halved onion dipped in oil, pour a ladle of batter in the centre, and spread it outward in a widening spiral with the back of the ladle.
💡 Test the heat with a few drops of water: they should dance and vanish in about two seconds. Too cool and the batter sticks; too hot and it seizes before you can spread it.
Drizzle a teaspoon of ghee around the rim. Cook 2 minutes without touching it, until the surface dulls, the edges lift and the underside is deep golden and crisp.
Spoon potato along the centre, fold the dosa over it and slide it out. Serve immediately with coconut chutney and sambar.
