  1. Cut the eomuk sheets into bite-size pieces and slice the green onion into thin rounds.

  2. Set a pan over LOW heat and add the oil, the green onion, the 1/6 tbsp of minced garlic and the 1/2 tbsp of gochugaru all together.

    💡 The gochugaru goes in at the START, into cold-ish oil on low heat — not later with the sauce. You are making chili oil, and chili powder dropped into an already-hot pan burns black in seconds.

  3. Fry for 1 minute on low, stirring so nothing catches.

  4. You are looking for the oil itself to turn red — the gochugaru gives its colour and aroma up into the fat, and the pan smells sweet and smoky rather than raw.

    💡 That red oil is what coats the fish cake later. Bloom the chili properly and the dish tastes of chili; add it at the end and it just tastes of dust.

  5. Once the oil has gone red, add the 2 tbsp of soy sauce and the 1 tbsp of sugar and fry them together.

  6. Stir until the sugar has dissolved completely — no grit left on the bottom of the pan.

  7. Add the eomuk pieces and turn them through the red sauce until every piece is coated.

  8. Pour in the 1/4 cup of water and keep frying.

  9. Reduce it until only about 1 tablespoon of liquid is left in the pan — that is his measure, and it is exact for a reason.

  • Beginner's mistake: adding the gochugaru at the end with the soy sauce, the way most stir-fry recipes work. Here it goes into the oil first on low heat, because the recipe wants chili OIL, not chili powder — and powder hitting a hot pan late just burns and tastes of ash.
  • Substitution: his own note is that oligodang can replace the sugar — it gives more shine and a cleaner sweetness. Corn syrup or honey do the same; if you use honey, add it off the heat, as its aroma cooks away.
  • Blanch or rinse the eomuk in hot water first if you mind the oil that fish cake is packaged with. It is not in his method, but it lifts the surface oil and lets the sauce grip better. Pat it dry before it goes in.
  • One spoonful of sauce left in the pan looks like a mistake and is not. If you want it as a hot side to eat right now, reduce it further; if it is going in a lunchbox, stop exactly where he says.
