Spam Mayo Rice Bowl · Haruhankki

Half a can of Spam, half an onion, two eggs, and a squeeze of mayonnaise over hot rice. Everything is cooked separately and only meets in the bowl — which is exactly why each part still tastes of itself.

Recipe published by 하루한끼The creator publishes the recipe — ingredients, a separate seasoning list and six numbered steps — in this video's description, which at 5.0M views is the most-watched recipe in this batch. The serving count is read off his own scale: half a can of Spam, half an onion, two eggs, one bowl of rice. He states the amount for the soy and sugar in the method, but leaves rice, salt and mayonnaise unmeasured, and those are marked as unmeasured here. The closing line suggesting green onion or Cheongyang chili on top is his.

Pasos

  1. Cut the onion into thin strips and the half block of Spam into cubes, roughly 1.5 cm.

  2. Crack the 2 eggs into a bowl, add a pinch of salt and a little sugar, and beat them until the yolk and white are one colour.

💡 Sugar in the egg is not a typo — it is his. A little sugar makes scrambled egg taste rounder and browns it slightly faster, which is what you want against salty Spam.

  3. Set a pan over medium heat with a little oil, pour in the egg and scramble it in soft folds. Take it out while it still looks a shade underdone.

💡 Residual heat keeps cooking it in the bowl. Egg that looks perfect in the pan is already overcooked by the time it reaches the rice.

  4. Set the scrambled egg aside in a bowl.

  5. In the same pan, fry the Spam cubes over medium heat until they are browned and crisp at the edges — 2–3 minutes, turning them so several faces catch.

💡 Add no oil for this. Spam renders plenty of its own fat, and that rendered fat is what you will fry the onion in next.

  6. Lift the Spam out and set it aside with the egg.

  7. Add a little oil to the pan if it looks dry, then fry the onion strips over medium heat until they soften and go translucent.

  8. Add 1 spoon of jin-ganjang and half a spoon of sugar to the onion, and keep frying until the liquid has cooked away and the onion is glossy and lightly caramelised.

💡 Pour the soy onto the hot pan surface rather than straight onto the onion — it hisses, catches and picks up a toasted edge instead of just tasting salty.

  9. Put a bowl of hot rice out and spread it flat so the toppings have somewhere to sit.

  10. Lay the scrambled egg, the crisp Spam and the soy onion over the rice, keeping each in its own section rather than mixing them.

  11. Squeeze mayonnaise over the top in a zigzag.

💡 Mayo goes on last and off the heat. It is an emulsion of oil and egg — heat it in the pan and it splits into greasy liquid.

  12. If you like, scatter sliced green onion or Cheongyang chili over the top — his own suggestion — then mix it all together as you eat.

💡 Consejos

  • Beginner's mistake: cooking everything in the pan at once to save washing up. The eggs need gentleness, the Spam needs hard heat and the onion needs the Spam's fat — thrown in together, the egg overcooks and the Spam steams instead of crisping. Three quick rounds in one pan, no washing between.
  • Substitution: no Spam? Any luncheon meat, sausage, bacon or even leftover ham does the same job — you need something salty and fatty that crisps. If it is leaner than Spam, add a little oil for the onion.
  • Rinse or blanch the Spam cubes for 10 seconds in hot water first if you find it too salty — you lose a little richness but the bowl stops fighting the soy onion.
  • The mayonnaise is not a garnish. It is the sauce — the only thing binding dry rice, dry egg and salty meat together. Do not be shy with it, and do not swap it for a low-fat one, which is watery and slides off.
