  1. Bring the shanks to the boil in the water, then skim the grey foam off for the first 10 minutes.

  2. Add the onion and peppercorns. Simmer gently, uncovered, for 2.5 to 3 hours.

  3. Season with the fish sauce, add the corn and cook 10 minutes.
