  1. Brown the chicken in the oil on all sides over medium-high heat, then lift it out.

  2. Fry the potatoes and carrots in the same pan for 4 minutes until their edges colour, and set them aside too.

    💡 Frying the potato first seals it. Dropped straight into the sauce it disintegrates and thickens the stew into paste.

  3. Soften the onion and garlic in the same pan, 3 minutes.

  4. Add the tomato sauce, stock, fish sauce, bay and sugar. Return the chicken and simmer, covered, 20 minutes.

  5. Add the potatoes and carrots and simmer 12 minutes more until a knife slides into the potato.

  6. Stir in the peppers, cook 3 minutes, season with pepper and serve with rice.

    💡 Peppers last and briefly. Simmered from the start they go grey and slack, and their job here is colour and a little crunch.

  • Afritada, menudo and kaldereta are three tomato stews that outsiders keep confusing. Afritada is chunky and mild, menudo is diced and has liver, kaldereta is beef or goat and carries chilli and liver spread.
