Japanese street food / 焼きそば — Yakisoba ('fried soba') is stir-fried wheat noodles — not buckwheat, despite the name — with pork, cabbage and a sweet Worcestershire-style sauce. A Showa-era favourite, it is a fixture of festival stalls and home griddles.

Loosen the noodles by rinsing them briefly under warm water so they separate.
Stir-fry the sliced pork in a hot oiled pan until it colours.
Add the cabbage, onion and carrot and fry until just wilted but still crisp.
Push in the noodles, add a splash of water, and toss to warm them through.
Pour the sauce over and stir-fry hard until every strand is coated and glossy.
Plate up and finish with aonori, pickled red ginger and bonito flakes.
