Steps

  1. Blanch the mutton in boiling water 5 minutes, drain and rinse — this takes the strong smell off and keeps the broth clear.

  2. Blend the shallots, garlic, ginger and candlenuts. Fry the paste in the oil with the turmeric, coriander, cumin and whole spices 5 minutes until fragrant.

  3. Add the mutton and turn it in the spices 3 minutes. Add the water, lime leaves, salt and pepper. Bring to a boil, skim, and simmer partly covered 2 hours until the meat is falling off the bone.

    💡 Two hours, and it can go three. Mutton that is still chewy is mutton that was rushed — the stall's pot has been on since afternoon.

  4. Add the tomatoes and celery and simmer 10 minutes more. Taste and adjust the salt — the broth should be yellow, faintly sweet from the shallots and clearly spiced.

  5. Serve in deep bowls topped with spring onion and fried shallots, lime on the side, and bread — roti or toast — to dip.

💡 Tips

  • Sup tulang, the Singapore mamak version, uses only the bones and a much redder, thicker gravy. Same family, different night out.
  • It is better the next day and freezes well. Skim the fat off the cold soup if you like it lighter.
