Ice desserts have deep roots in Korea, where royal ice stores kept ice through the summer; the modern red-bean patbingsu took shape in the twentieth century and now appears in countless café variations.

Shave the ice into fine, snow-like flakes with a shaved-ice machine, or pulse ice cubes in a blender until powdery.
💡 Freezing sweetened milk into a block and shaving that gives the creamy 'snow ice' texture cafés use.
Pile the shaved ice into a wide, chilled bowl in a tall, loose mound.
Spoon the red-bean paste over the top and tuck the rice cakes around it.
Arrange the cut fruit over the ice for color and freshness.
Drizzle generously with condensed milk, dust with soybean powder, and eat at once before it melts.
