Kansai · Osaka style / 関西風 — Okonomiyaki is a savory griddled pancake of flour batter and shredded cabbage with chosen fillings. The Kansai/Osaka style mixes everything into the batter, while the Hiroshima style layers the ingredients and adds noodles.

Whisk the flour, dashi and eggs into a smooth batter, then fold through the shredded cabbage until it's well coated.
Pour a thick round onto a hot, oiled griddle and lay the pork slices across the top.
Cook until the underside is set and golden, then flip the whole pancake and press it gently.
Cook the second side through until the pork is crisp, then flip once more so the pork faces up.
Brush with okonomiyaki sauce, drizzle mayo, scatter aonori and bonito flakes, and serve from the pan.
