Steps

  1. Whisk the flour, dashi and eggs into a smooth batter, then fold through the shredded cabbage until it's well coated.

  2. Pour a thick round onto a hot, oiled griddle and lay the pork slices across the top.

  3. Cook until the underside is set and golden, then flip the whole pancake and press it gently.

  4. Cook the second side through until the pork is crisp, then flip once more so the pork faces up.

  5. Brush with okonomiyaki sauce, drizzle mayo, scatter aonori and bonito flakes, and serve from the pan.

💡 Tips

  • More cabbage and less batter gives a lighter, fluffier pancake — the batter should just bind it.
  • Don't press too hard after flipping or you'll squash out the airy texture.
  • Flip only once if you can — repeated turning tends to break the pancake apart.
