Steps

  1. Warm the dashi in a small pot until steaming but not boiling.

  2. Rehydrate the wakame in a little water for a few minutes, then add it to the pot with the tofu.

  3. Scoop the miso into a ladle, lower it into the broth, and whisk it loose so it dissolves without lumps.

  4. Heat through gently — never let it boil hard, which dulls the miso's aroma.

  5. Ladle into bowls and scatter green onion on top.

💡 Tips

  • Add miso off a hard boil to keep its fragrance and probiotics.
  • Kombu-only dashi keeps the bowl fully vegetarian.
  • Add silken tofu last so it doesn't break apart.
