Boil the soaked peas in salted water with a pinch of turmeric 30–40 minutes until tender. Drain and keep warm.
Heat the oil and fry the onion slices slowly until deep golden and crisp. Lift half out onto paper for the topping.
💡 Slow is the whole technique. Onions crisped fast are brown outside and limp inside; slow ones are crisp all the way through and stay that way on the rice.
To the onions still in the pan add the drained rice, turmeric and salt. Stir 2 minutes so every grain is coated in yellow oil.
Add the water, bring to a boil, cover tightly and cook on the lowest heat 20 minutes. Rest, covered, 10 minutes more.
💡 Do not lift the lid. The rice cooks in trapped steam, and each peek costs it.
Toast the sesame seeds in a dry pan until they pop and smell nutty. Crush lightly with a pinch of salt.
Fluff the rice, mound it on plates and cover with the crisp onions and sesame salt. Serve with the peas alongside.
