Steps

  1. Roughly chop the tomatoes, cucumber and pepper and soak the bread in a little water.

  2. Blend all the vegetables with the garlic and softened bread until completely smooth.

  3. With the blender running, stream in the olive oil so the soup turns creamy and emulsified.

  4. Season with sherry vinegar, salt and a little cold water to reach a drinkable consistency.

  5. Pass through a sieve for a silkier texture if you like, then chill thoroughly.

  6. Serve cold with a drizzle of oil and finely diced vegetables on top.

💡 Tips

  • The riper the tomatoes, the better — this is a dish about produce.
  • Streaming in the oil at the end gives body and shine.
  • Always serve it very cold; chill at least two hours.
