Stir the soy, mirin, sake and sugar together until the sugar dissolves.
Sear the thighs skin-side down in a lightly oiled pan until the skin is deep golden and crisp, then flip and cook through.
Pour off excess fat, add the sauce, and let it bubble around the chicken.
Turn the pieces to coat as the sauce reduces to a thick, shiny glaze.
Rest briefly, slice, and spoon the pan glaze over the top with steamed rice.
