Steps

  1. Whisk both flours with the water, sugar, salt and eggs into a smooth pouring batter and rest it 30 minutes.

  2. Heat a heavy 24 cm pan over medium heat and brush it with oil.

  3. Pour in a ladle, swirl to a 5 mm thickness, and cook uncovered until the surface loses its shine and the edges lift — about 4 minutes.

    💡 One side only, and no flipping. The top is meant to stay pale and soft against a base that has gone crisp — turn it and you have made a different, flatter thing.

  4. Scatter poppy seeds, coconut, peanuts and palm sugar over the wet surface while it is still cooking.

  5. Cover for the last minute so the toppings sink in and the palm sugar melts.

  6. Cut into wedges in the pan and lift them out. Eat hot.
