Steps

  1. Pile the cherry tomatoes in a baking dish, nestle the whole block of feta in the middle, and tuck in the garlic.

  2. Drizzle everything generously with olive oil and season with salt and pepper.

  3. Roast at 200°C (400°F) for about 30 minutes until the tomatoes burst and the feta is soft and golden at the edges.

  4. Meanwhile boil the pasta until al dente and save a little cooking water.

  5. Mash the roasted feta, tomatoes and garlic together into a creamy sauce.

  6. Fold in the pasta with a splash of the water, tear in basil, and serve.

  • Roast until the tomatoes actually burst — that juice is the sauce.
  • Use a block of feta in brine, not pre-crumbled, for the creamiest melt.
  • A pinch of chili flakes is a great optional upgrade.
